Chicago coffee: new Café Jon stuns with upscale style and specialty brews

On Sunday, Sept. 6, a new coffee-and-event space opens on Pilsen’s 18th Street that literally repurposes a neighborhood landmark: the former Ruben’s Auto Service. Backed by the founders of Jon Basíl Tequila and local artist-entrepreneur Ruben Mandujano, Café Jon and Galleria aims to be more than a cafe — it’s pitched as a community hub at a moment when Pilsen’s future is fiercely debated.

The operation began limited weekend service in July and will celebrate its official opening this weekend. The 6,000‑square‑foot site at West 18th and Damen combines a daytime coffee program, a 4,000‑square‑foot private event area, and rotating art shows — all inside a space that preserves artifacts from Mandujano’s three‑decade auto business.

Monday Coffee Company supplies the beans and Felton Kizer, one of Monday’s co‑founders, oversees the beverage menu. Expect house touches such as honey‑rosemary and brown sugar‑vanilla syrups alongside pastries produced by an in‑house Saints Bakery residency.

The interior is intentionally nostalgic: a Yamaha scooter mounted on a wall, vintage parking signage and license plates, and an old engine converted into a coffee table sit alongside 1990s Chicago Bulls memorabilia. The assemblage is meant to signal continuity with the block’s past while opening the space to new uses.

Why this matters now

Pilsen has been a focal point in Chicago’s long conversation about displacement. Over the last three decades the neighborhood has faced rising housing costs and development pressure, and data show the shift in affordability: a 2023 report from the University of Illinois Chicago found the share of residents paying more than $1,000 in rent around Pilsen rose from 32.5% in 2005 to 51.5% in 2020.

For longtime property owners such as Mandujano, offers from developers were frequent. He declined multiple buyouts and instead joined the cafe partnership as a way to remain rooted and to shape how the property evolves. The project’s backers say the goal is to provide a gathering place that reflects neighborhood history while programming art shows, tastings and brand events.

Jon Basíl co‑founders Uduimoh Umolu and Belall Taher — both Chicago area natives whose upbringing they say was shaped by nearby Mexican cultural influences — launched their tequila brand in 2015. The company sells blanco, reposado and añejo tequila made in Jalisco and, according to the owners, is now carried at more than 900 outlets across Chicago with national distribution deals in place. Café Jon is the brand’s first permanent physical venue.

Mandujano, who has lived in Pilsen for four decades and also runs the nearby Xoco House Gallery, framed the partnership as an opportunity to keep the property in community hands while inviting new audiences.

The owners argue their model attempts to balance brand growth with local stewardship, yet the structural pressures that drive rising rents remain unchanged.

Looking ahead, Café Jon’s calendar will include gallery shows by neighborhood artists, tequila tastings tied to the Jon Basíl brand, and community‑facing activations. Whether the hybrid space becomes a lasting local institution will depend on how it navigates those economic tensions and whether programming continues to reflect Pilsen’s cultural roots.

For now, the opening adds a visible new gathering spot in a rapidly changing corridor — a reminder that redevelopment in Chicago often arrives layered with questions about who benefits and who stays.
